Pumpkin-Cranberry Cookies - cooking recipe

1 1/2 c. cranberries
1 c. plus 3 Tbsp. sugar, divided
2 1/2 c. flour
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. butter
1 c. canned pumpkin
1/2 c. honey
2 tsp. vanilla
1 tsp. orange zest
1 1/2 c. chopped nuts
Preparation

Preheat oven to 375\u00b0.
Grease (or Pam) baking sheets.
Chop cranberries and combine with 3 tablespoons sugar.
Combine flour, baking powder, cinnamon, baking soda and salt in bowl.
With mixer set on medium-high, beat butter and remaining 1 cup sugar until creamy.
Beat in pumpkin, honey, vanilla and zest.
Reduce speed to low and gradually beat in flour mixture.
Stir in nuts and cranberries.
