Simmered Chinese Chicken - cooking recipe

Ingredients
    1 whole chicken or 8 pieces
    1 Tbsp. vegetable oil
    1/3 c. soy sauce
    1/3 c. brown sugar
    1/2 c. water
    1/4 c. catsup
    1/4 c. dry sherry or apple juice
    1/2 tsp. crushed red pepper flakes
    1 garlic clove, crushed
    1 green onion, sliced
    2 Tbsp. cornstarch
    1 Tbsp. water
    1 Tbsp. toasted sesame seed
Preparation
    Heat oil in Dutch oven or large skillet with lid. Brown chicken on all sides; remove fat from pan.
    (I use a \"turkey baster.\")
    In a medium bowl, mix together the soy sauce, brown sugar, catsup, sherry or apple juice, red pepper flakes, garlic and green onion.
    Pour mixture over chicken in Dutch oven.
    Cover tightly and simmer 35 to 40 minutes.
    Remove chicken to platter. Keep warm in 250\u00b0 oven.
