Peppery Mini-Bites - cooking recipe
Ingredients

1/2 c. chopped red or green peppers
1/2 c. finely chopped green onions
2 eggs
2 egg whites
1/2 c. shredded Cheddar cheese
1 tsp. chili powder
1/2 tsp. ground cumin
1/8 tsp. ground red pepper
1 can chopped green chilies, drained
Preparation

Heat oven to 425\u00b0.
Spray 10-inch nonstick skillet with nonstick cooking spray.
Cook bell peppers and onions in skillet. Beat eggs and egg whites slightly.
Stir in bell pepper mixture and remaining ingredients.
Spray muffin cup pan with
nonstick cooking spray.
Spoon 1 tablespoon mixture into each muffin cups. Bake 8 to 10 minutes until centers are set.
Let cool 1 minute. Loosen edges with knife and remove from pan.
