Zucchini Provencale - cooking recipe

Ingredients
    1/4 c. salad oil
    2 lb. zucchini, sliced
    4 tomatoes, in chunks
    salt and pepper to taste
    1 medium sliced onion
    1 clove garlic
    1 green pepper, chopped
    parsley for garnish
    Parmesan cheese for garnish
Preparation
    Heat oil in skillet and saute onions and garlic.
    Add zucchini, tomatoes, green pepper, salt and pepper.
    Cook until tender, 10 to 15 minutes.
    Sprinkle with minced parsley and Parmesan cheese.
    Serve over hot buttered rice.
