Red Beans And Rice - cooking recipe

Ingredients
    6 oz. low-fat smoked sausage, sliced
    1 c. chopped onion
    3/4 c. chopped green pepper
    1 clove garlic, minced
    3 (16 oz.) cans red beans, drained
    1 (14 1/2 oz.) can no salt added stewed tomatoes, chopped (undrained)
    1 1/2 c. water
    1 (6 oz.) can no salt added tomato paste
    1/4 tsp. dried oregano
    1/4 tsp. dried thyme
    1/4 tsp. hot sauce (Tabasco sauce)
    1 bay leaf
    4 c. cooked long grain rice
Preparation
    Coat Dutch oven with cooking spray.
    Place over medium heat until hot.
    Add sausage and next 3 ingredients.
    Saute until tender.
    Add beans and next 7 ingredients.
    Bring to boil.
    Cover and reduce heat.
    Simmer 20 minutes or until heated.
    Remove and discard bay leaf.
    Serve over rice.
    Makes 8 servings.
    Each serving contains 310 calories and 1.2 g fat.
