Grandma'S Favorite Potato Salad - cooking recipe

Ingredients
    4 medium sized potatoes (red are best)
    1/2 to 1 small red onion, thinly sliced
    1/2 c. fresh parsley, chopped
    3 to 4 Tbsp. olive oil or other vegetable oil
    2 Tbsp. vinegar (more if desired)
    salt and pepper to taste
    1 clove garlic, pressed (if desired)
Preparation
    Scrub and cook potatoes until well done, but not mushy.
    Best if cooked \"in jackets\".
    Cool and slice (do not cube).
    Add onion and parsley.
    Whisk oil, vinegar, salt, pepper and garlic.
    Pour over potatoes in onion and turn over lightly.
    Chill and serve.
