Baked Zucchini(Zucchini Is Good Anytime.) - cooking recipe
Ingredients

2 lb. zucchini (unpeeled)
2 Tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper
2 medium onions, cut in small pieces
2 c. tomatoes or 1 can stewed tomatoes
1/2 c. grated sharp cheese
Preparation

In a skillet, saute the onions with butter until a golden brown.
Add zucchini and cook over low heat, about 10 minutes, stirring often.
Add tomatoes, salt and pepper; simmer, covered, 5 more minutes.
Place in a casserole dish, cover top with cheese and bake in a 375\u00b0 oven for 20 minutes or more.
Serves 6 to 8.
