No Crust Spinach Quiche(Low Carb) - cooking recipe
Ingredients

3/4 c. chopped green pepper
3/4 c. chopped onion
1 1/2 c. sliced mushrooms
1 1/2 c. sliced zucchini
1 1/2 tsp. minced garlic
3 Tbsp. oil
1 (10 oz.) pkg. chopped spinach, thawed and drained
1 (7 oz.) pkg. Feta cheese
1 1/2 tsp. thyme
1 Tbsp. parsley
1/4 tsp. pepper
5 eggs, beaten
1 (16 oz.) Ricotta cheese
3/4 tsp. salt
Preparation

Saute the first 5 ingredients in oil. Drain and cool. Combine eggs and Ricotta cheese and beat until blended. Add veggies and all other ingredients.
Stir until blended. Pour mixture into lightly greased 10-inch deep dish quiche pan. Bake at 350\u00b0 for 1 hour. Let stand 10 minutes before cutting.
