Zucchini Beef Casserole - cooking recipe
Ingredients

3 medium zucchini, sliced
1/2 onion, chopped
1 small green pepper, chopped
salt and pepper to taste
1 c. cracker crumbs
1 can cream of chicken soup
Parmesan cheese
1/2 lb. ground beef
Preparation

Arrange zucchini in greased 2-quart casserole dish.
Fold in onion and green pepper.
Season with salt and pepper.
Cover with crumbs.
Pour undiluted soup over all.
Sprinkle with cheese. Bake at 325\u00b0 for 45 minutes.
Brown ground beef in skillet, stirring until crumbly.
Season with salt and pepper.
Sprinkle over baked casserole.
Bake 25 minutes longer.
