Herbed Potatoes - cooking recipe

Ingredients
    vegetable cooking spray
    4 medium potatoes, cut into 1/4-inch slices
    2 medium white onions, cut into 1/4-inch slices
    5 plum tomatoes, sliced
    1/2 tsp. salt
    1 tsp. dried whole thyme
    3/4 tsp. dried rosemary, crushed
    1 Tbsp. olive oil
    2 Tbsp. fresh parsley
Preparation
    Coat a large baking dish with cooking spray. Layer half each of potatoes, onions and tomatoes in dish; sprinkle with half each of salt, thyme and rosemary. Repeat layers and drizzle with olive oil. Cover and bake at 425\u00b0 for 35 to 40 minutes or until tender. Sprinkle with parsley.
