Peach Poppy Seed Muffins - cooking recipe
Ingredients

2/3 c. pureed ripe peaches or junior baby food peaches
1 tsp. baking powder
10 Tbsp. butter or margarine
2 eggs
1 c. sugar
1 1/4 c. flour
1/4 tsp. salt
1/2 tsp. vanilla
3 Tbsp. poppy seed
Preparation

Stir baking soda into pureed peaches.
Be prepared for the mixture to foam.
Cream butter or margarine and sugar until mixture is smooth.
Add eggs, one at a time.
Alternately add flour and peach puree.
Stir in salt, vanilla and poppy seed.
Fill greased muffin cups almost to top.
Bake at 350\u00b0 for 20 to 25 minutes, or until wooden pick inserted into a muffin comes out clean.
Makes 12 to 18 muffins, depending on size.
