Mexican Rice Casserole - cooking recipe

Ingredients
    1/2 lb. mushrooms
    1/2 lb. ground beef
    1 c. raw rice
    1 medium chopped onion
    1 medium chopped pepper
    2 1/2 c. chopped tomato
    1 1/2 c. hot water
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Clean and slice mushrooms and set aside.
    Start to brown meat in a large skillet; add mushrooms, rice, onion and pepper. Continue browning until rice is lightly browned.
    Stir in tomatoes, water and seasoning.
    Turn into a 3-quart casserole and cover.
    Bake at 350\u00b0 for 50 to 60 minutes until rice is tender and liquid is absorbed.
    Remove cover for last 10 minutes of baking time.
