Diabetic Grape Spread - cooking recipe
Ingredients

1 tsp. lemon juice
1/2 cup cold water
1 1/2 cups pure concord grape juice
2 tsp. gelatin
artificial sweetener equivalent to 1/4 cup sugar
Preparation

Soak gelatin in cold water. Heat grape and lemon juice. Bring to a boil and simmer gently for 10 minutes. Remove from heat and add gelatin and artificial sweetener. Stir to dissolve. Pour carefully into 2 hot, clean 1/2 pint jars. Cover lightly until cooled, then tighten lids and store in refrigerator.
