Shrimp And Rice Casserole - cooking recipe

Ingredients
    2 lb. medium shrimp, boiled, peeled and deveined
    2 Tbsp. butter
    1 c. chopped celery
    1 c. chopped green onion
    1 c. cooked rice
    1 c. skim milk
    1 can cream of mushroom soup
    1 (8 oz.) can water chestnuts, drained and chopped
    1/2 c. mayonnaise
    1 tsp. parsley
    salt and pepper
Preparation
    Melt butter in a large skillet over medium-high heat.
    Add celery and onion.
    Cook, stirring constantly, until tender.
    Stir in rice, milk, soup (undiluted), water chestnuts, mayonnaise, parsley and salt and pepper (to taste).
    Stir until well mixed. Add shrimp and gently fold into mixture.
    Spoon mixture into greased casserole dish and bake at 350\u00b0 for 30 minutes or until bubbly.
