Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 tsp. vanilla
2 c. flour
1/4 tsp. baking powder
2 tsp. baking soda
3 tsp. ground cinnamon
1 tsp. salt
1 c. raisins & walnuts
3 medium zucchini
Preparation

Beat eggs lightly in large bowl. Stir in oil, grated & well drained zucchini, sugar & vanilla. Sift flour, baking powder, soda, cinnamon & salt onto waxed paper. Stir in egg mixture until well blended, stir in raisins & nuts. Put into 2 well-greased loaf pans. Bake at 350\u00b0 for 1 hour or until center springs back when touched with fingertip. Cool in pans on racks for 10 min. remove from pans and cool completely.
