Scotch Oatmeal Shortbread - cooking recipe

Ingredients
    3 c. oatmeal (uncooked)
    2/3 c. sugar
    1/2 c. sifted flour
    1/2 tsp. salt
    3/4 c. butter, softened
    1 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    Lightly grease 13 x 9 x 2-inch pan.
    In large bowl, combine oats, sugar, flour and salt.
    With pastry blender, cut in butter until mixture resembles coarse cornmeal. Stir in vanilla; mix well.
    With hands, press mixture evenly into prepared pan.
    Bake 25 to 30 minutes or until golden.
    Cool slightly.
    Cut into bars while still warm.
    Let cool completely in pan before removing.
    Makes 32.
