Glazed Carrot Coins - cooking recipe

Ingredients
    1/2 c. water
    1/2 tsp. salt
    7 to 8 medium carrots, thinly sliced in rounds
    3 Tbsp. butter
    2/3 c. firmly packed brown sugar
    2 Tbsp. lemon rind
Preparation
    Combine water, salt and carrots in a 1-quart casserole dish. Cover tightly with plastic wrap.
    Microwave 15 minutes on High, or until carrots are tender.
    Stir in butter, sugar and lemon rind. Cover.
    Microwave on High for 4 minutes, or until hot and glazed. Serves 6.
