Bubby'S Chicken Soup - cooking recipe

Ingredients
    1 (6 lb.) chicken, cut up
    2 1/2 qt. water
    2 onions
    chicken giblets
    3 stalks celery
    2 carrots
    2 sprigs parsley
    salt and pepper to taste
    cooked rice or soup noodles (optional)
Preparation
    Wash chicken thoroughly.
    Combine chicken, giblets, water and onions in a large pot.
    Skim top when it comes to a boil.
    Add celery, parsley, carrots, salt and pepper.
    Reduce heat; cover and simmer for 1 hour or until chicken is done (loose on bone).
    Can be served over cooked rice or soup noodles.
