Pumpkin Roll - cooking recipe

Ingredients
    3 eggs
    2/3 c. pumpkin
    1 c. sugar
    1 t. baking soda
    1/2 t. cinnamon
    3/4 c. plain flour
    chopped pecans, optional
    2 T. soft butter
    8 oz. cream cheese softened
    1 c. powdered sugar
    3/4 t. vanilla
Preparation
    Grease a 10x15 cookie sheet and line with waxed paper.
    Mix first six ingredients together in medium bowl.
    Pour mixture in cookie sheet and sprinkle with chopped pecans.
    Bake at 350 degrees for 15 min.
    Turn onto a towel sprinkled with powdered sugar and roll it up in the towel a few times while warm (for flexibility).
    Let cool, remove waxed paper and cover with filling.
    For filling, mix butter, cream cheese powdered sugar and vanilla.
    Beat until smooth.
    Spread over pumpkin mixture after cool.
    Roll up like a jelly roll and wrap in foil.
    Keep refrigerated.
    Will keep for weeks.
    Can be frozen.
