Chow Chow Pancakes - cooking recipe

Ingredients
    2 eggs, beaten
    1 c. finely shredded zucchini or crookneck squash
    1/4 c. finely chopped onion
    3 Tbsp. flour
    1/2 tsp. poultry seasoning
    dash of Worcestershire sauce
    1 c. finely shredded potatoes
    1/2 c. finely shredded carrots
    1/4 c. finely chopped red or green pepper
    dash of ground red pepper
Preparation
    In a medium mixing bowl, stir together the eggs, potatoes, zucchini, carrots, onion, peppers, flour, poultry seasoning and Worcestershire sauce.
    Mix well.
    Spoon 1/4 cup of mixture onto a hot, oiled griddle; flatten with a spatula.
    Repeat with remaining batter.
    (Good for when the zucchini takes over the garden.)
