Zucchini Bread - cooking recipe

Ingredients
    2 c. diced zucchini (unpeeled)
    1 c. oil
    3 eggs
    3 c. flour
    2 c. sugar
    1 tsp. cinnamon
    1 tsp. soda
    1 tsp. salt
    1/2 tsp. baking powder
    1/2 c. nuts
    2 tsp. vanilla
Preparation
    In blender, mix zucchini, oil and eggs.
    Sift flour, sugar, cinnamon, soda, baking powder and salt.
    Stir in zucchini mixture. Add nuts and vanilla.
    Bake in two greased and floured loaf pans at 325\u00b0 for 1 hour.
