"Melitzanes Me Loukanika" - Eggplant And Sausage Pie - cooking recipe

Ingredients
    1 (1 lb.) eggplant, diced
    1 Tbsp. salt
    3 Tbsp. olive oil
    1/2 lb. sweet sausage, casings removed
    1/2 lb. hot sausage, casings removed
    2 Tbsp. tomato paste
    1 to 2 Tbsp. Romano or Parmesan cheese, grated
    1/2 to 1 tsp. marjoram
    1/2 to 1 tsp. thyme
    salt and pepper
    2 1/2 c. Ricotta cheese, drained
    2 eggs, lightly beaten
    3 cloves garlic, finely minced
    3 Tbsp. capers (chopped or whole)
    1/2 lb. Mozzarella cheese, diced
    1/2 to 1 tsp. dried thyme
    1/2 to 1 tsp. dried marjoram
    salt and pepper
    12 sheets filo dough
    3 c. unsalted butter, melted
    1/3 c. olive oil
Preparation
    Dice the eggplant, leaving the skin on.
    Toss with salt and drain in a colander for 1 hour.
    Rinse under cold water and pat dry.
    Heat 2 tablespoons olive oil in a large skillet and cook the sausage until it has rendered its fat.
    Drain.
    In the same pan, cook the diced eggplant; add another tablespoon of olive oil and toss constantly.
