Ingredients

2 c. whole wheat flour
3/4 c. unbleached white flour
2 sticks soft butter
1 c. dark brown sugar
1 Tbsp. cinnamon
1/2 tsp. baking soda
salt
water
chopped nuts
Preparation

Put the first 6 ingredients into a big bowl and mix with clean hands; add a pinch of salt.
After well mixed, pat the dough on a buttered cookie pan (about 1/4-inch thick).
Brush top with pastry brush dipped in water.
Sprinkle top with chopped nuts.
Press nuts into dough.
Bake 20 minutes at 350\u00b0 or until golden brown. Cut into shapes while warm.
Let cookies cool about 10 minutes before removing them with a spatula.
