Mini Cheese Cakes - cooking recipe

Ingredients
    12 vanilla wafers
    1 (8 oz.) pkg. cream cheese
    1/3 c. plus 1 Tbsp. sugar
    1 egg
    1/2 tsp. vanilla
    1/2 tsp. lemon juice
    1 can fruit pie filling
Preparation
    Place wafer in bottom of liner (use 12 cupcake liners) in a cupcake pan.
    Beat cream cheese, sugar, egg, vanilla and lemon juice until light and fluffy.
    Fill liners 2/3 full.
    Bake at 375\u00b0 for 15 to 20 minutes.
    Top with spoonful of pie filling and chill. Makes 12.
