Balsamic Vinaigrette - cooking recipe

Ingredients
    5 Tbsp. balsamic vinegar (Aceto brand, if possible; available at Williams-Sonoma)
    1 egg white
    1/2 tsp. Dijon mustard
    1/2 tsp. Herbes de Provence
    salt and pepper
    2/3 c. olive oil
Preparation
    Lightly whisk together vinegar, egg white, mustard, herbs, salt and pepper. Slowly add oil, while continuing to beat the dressing.
