Zucchini Relish - cooking recipe
Ingredients

16 c. unpeeled zucchini
1 red pepper or pimento
2 1/2 c. vinegar
1 Tbsp. dry mustard
2 to 2 1/2 Tbsp. cornstarch
3/4 tsp. turmeric
1/2 tsp. black pepper
4 c. onions
1 green pepper
5 Tbsp. salt
6 c. sugar
3/4 tsp. nutmeg
1/2 tsp. celery seed
Preparation

Zucchini, onions and pepper should be finely chopped.
If desired, hot red pepper can be used in place of red sweet pepper or pimento.
Mix with salt; let stand overnight.
In the morning, wash in cold water and drain.
In large saucepan, combine vinegar, sugar, mustard, nutmeg, cornstarch, turmeric, celery seed and pepper.
Cook for 30 minutes, then add vegetable mixture and cook for 20 minutes.
Process and seal in hot jars.
Yields 7 pints.
