Spanish Rice And Beans - cooking recipe

Ingredients
    1 1/2 tsp. olive oil
    3/4 lb. onions, chopped
    2 tsp. chili powder
    1 tsp. leaf oregano
    1 c. fast cooking brown rice
    3/4 c. water
    2 Tbsp. cider vinegar
    1 lb. sweet green peppers, coarsely chopped
    1 (15 oz.) can black beans, rinsed and drained
Preparation
    Heat oil in saucepan over medium heat.
    Add onion; cook, covered, 6 minutes or until softened, stirring occasionally.
    Stir in chili powder and oregano; cook 1 minute.
    Stir in rice, water, vinegar and salt.
    Bring to a simmer.
    Scatter peppers on top. Cook, covered, 10 minutes.
    Stir in beans.
    Makes 4 servings at 69 cents each.
