Potato Dumplings For The Sauerbraten - cooking recipe

6 medium potatoes
2 eggs
3/4 c. flour
1/2 c. bread crumbs
1 tsp. salt
Preparation

Boil peeled potatoes for around 20 minutes.
Drain well.
Mash with a fork or grater.
Let air dry 30 minutes if very moist.
In a bowl, mix all of the ingredients.
Roll the potato mixture into 1 1/2-inch diameter balls and roll the balls in flour to lightly coat.
Boil salted water in a deep pot.
One at a time, drop half the balls into the water.
Boil potatoes 3 minutes after they rise to the top.
Remove potatoes with slotted spoon and drain on towels.
After the second batch, place potatoes in buttered dish in 350\u00b0 oven for 10 minutes.
