Herbed Tomatoes - cooking recipe

Ingredients
    1/2 c. chopped fresh parsley
    1/2 c. chopped fresh chives
    2/3 c. vegetable oil
    1/4 c. vinegar
    lettuce
    1/4 tsp. pepper
    pinch of dried whole thyme
    6 tomatoes, unpeeled and quartered
Preparation
    Combine parsley, chives, oil, vinegar, pepper and thyme; mix well.
    Place tomatoes in a shallow container; pour dressing over tomatoes.
    Cover and refrigerate overnight.
    Drain tomatoes, reserving dressing.
    Arrange tomatoes on lettuce-lined serving plates; spoon dressing over tomatoes.
    Yields 12 servings.
