Rice Pilaf - cooking recipe

Ingredients
    2 c. rice
    3 Tbsp. oil
    1 small onion, chopped
    1 beef bouillon cube
    3 Tbsp. tomato juice
    salt and pepper
    1 jar mushrooms, sliced
Preparation
    Heat skillet with oil; add rice and chopped onion.
    Saute until rice starts to brown.
    Add tomato juice; stir while it is sizzling.
    Add bouillon cube, salt, pepper and mushrooms.
    Cover with about 3 cups water.
    Cover; reduce heat and simmer on low for about 30 minutes.
    May have to add water.
    Taste test for doneness.
