Papas Chorreadas - cooking recipe

Ingredients
    4 medium size potatoes, cooked with the skin on in salt water
    1/2 c. chopped onion
    2 c. chopped tomatoes
    1 Tbsp. chopped cilantro
    1 Tbsp. chopped green onion
    1 Tbsp. wheat flour, dissolved in 3 Tbsp. milk
    1/2 c. grated white cheese
    1 Tbsp. butter
    1 Tbsp. oil
    salt and pepper to taste
Preparation
    Saute onion in butter and oil.
    When transparent, add tomatoes, salt and pepper.
    Let season a few minutes, then add the flour dissolved in the milk, stirring well until it begins to thicken. Pour this sauce over the cooked potatoes, cutting a cross on top of them.
    Pour the cheese, the cilantro and the green onions on top while still hot.
