Pork Roast - cooking recipe

Ingredients
    4 lb. pork roast
    2 tsp. black pepper
    1 1/2 tsp. salt
    1 tsp. red pepper (cayenne)
    1 tsp. sweet paprika
    1 tsp. thyme
    1/2 tsp. dry mustard
    3 Tbsp. butter
    1 Tbsp. oil
    1/2 c. finely chopped onion
    1/2 c. celery, chopped
    1/2 c. pepper, chopped (optional)
    1 Tbsp. minced garlic
Preparation
    Combine all the ingredients.
    Make slits and place mixture into slits in the roast.
    Roast in baking pan, uncovered, at 275\u00b0 for 3 hours, then at 425\u00b0 until dark brown.
