Lemon Chicken With Thyme - cooking recipe

Ingredients
    3 Tbsp. flour
    1/2 tsp. salt
    1/4 tsp. pepper
    4 skinless, boneless chicken breast halves (1 lb. total)
    2 Tbsp. olive oil
    1 medium onion, coarsely chopped
    1 Tbsp. margarine
    1 c. chicken broth
    3 Tbsp. lemon juice
    1/2 tsp. thyme
    lemon wedges (optional)
    2 Tbsp. chopped parsley (optional)
Preparation
    In a plastic bag, combine flour, salt and pepper.
    Shake to mix.
    Add chicken; shake to coat.
    Remove chicken; reserve flour. In large skillet, warm 1 tablespoon of oil over medium heat.
    Add chicken and brown on one side about 5 minutes.
    Add remaining oil, turn and brown chicken well on second side.
    Transfer chicken to plate; set aside.
    Add margarine to skillet; when melted, add onion and cook until softened.
    Stir in reserved flour.
    Cook, stirring, until flour is completely incorporated.
    Add broth, 2 tablespoons of lemon juice and thyme; bring to a boil, stirring constantly. Return chicken to skillet.
    Reduce heat to medium-low; cover.
    Cook until chicken is tender and opaque (5 minutes).
    Remove chicken to serving platter.
    Stir in 1 tablespoon lemon juice in skillet and pour over chicken.
    Serve chicken with lemon wedge, sprinkling parsley if desired.
