Mixed Vegetables With Pasta - cooking recipe
Ingredients

2/3 c. defatted chicken broth
1 medium onion, chopped
2 cloves garlic, minced or 2 tsp. canned minced garlic
1 Tbsp. basil
6 large mushrooms, sliced
1 (16 oz.) can tomatoes (including juice)
1 (1 lb.) pkg. frozen cauliflower, broccoli, zucchini and carrots or fresh vegetables of your choice
6 oz. thin spaghetti, cooked and drained
Parmesan cheese, grated
salt and pepper to taste
Preparation

In a large skillet, saute onion, garlic and mushrooms in chicken broth.
Add tomatoes and basil.
Cook 5 minutes over medium heat.
Add vegetables and cook 10 minutes or until tender but crisp.
Stir often.
Salt and pepper to taste.
Serve over cooked pasta.
Sprinkle with Parmesan cheese.
Yields 2 large servings.
