Broccoli-Tofu-Stir-Fry - cooking recipe

Ingredients
    1 Tbsp. plus 1 tsp. olive oil
    12 oz. firm tofu, drained and cut in 1/2-inch cubes
    1 small onion, sliced
    1/4 c. low-sodium soy sauce
    2 Tbsp. rice vinegar
    1 Tbsp. grated fresh ginger
    2 c. broccoli florets
    1 medium red bell pepper (cut into thin strips)
    1 1/2 c. sliced mushrooms (fresh)
Preparation
    Heat oil in skillet.
    Stir-fry onion until tender.
    Add tofu and stir-fry until lightly browned.
    Add soy sauce, vinegar, ginger and vegetables.
    Gently toss, coating all ingredients with sauce.
    Cover and simmer over medium heat 5 minutes, until veggies are tender.
    Serves 4.
