Cottage Cheese Pancakes - cooking recipe
Ingredients

1/2 c. low-fat cottage cheese
2 beaten eggs
1/2 tsp. salt
1 1/2 Tbsp. white flour (unbleached)
1 Tbsp. safflower oil
Preparation

Place all ingredients except oil in a blender and blend until smooth.
Place oil in a nonstick pan.
Heat until hot.
Drop batter by tablespoons onto griddle.
Brown on both sides.
Serve with blueberry sauce.
Serves 2.
