Apple Pie Filling - cooking recipe

Ingredients
    6 qt. sliced apples
    1 1/2 c. Clear Jel
    2 1/2 c. cold water
    3/4 c. bottled lemon juice
    7 drops yellow food coloring (optional)
    5 1/2 c. sugar
    1 Tbsp. cinnamon
    5 c. apple juice
    1 tsp. nutmeg (optional)
    1 tsp. ascorbic acid or 6 tablets ascorbic acid (500 mg Vitamin C)
Preparation
    Wash, peel and core apples.
    Prepare slices 1/2-inch wide and place in 1 gallon water containing 1 level teaspoon ascorbic acid or 6 tablets (500 milligrams Vitamin C) to prevent browning.
