Super Easy Pepper Steak - cooking recipe

Ingredients
    1 lb. beef round or chuck, trim fat
    1/4 c. soy sauce
    1 clove garlic
    1/2 tsp. ground ginger
    1/4 c. vegetable oil
    1 c. onion, sliced thin
    1 c. green pepper, cut in 1-inch pieces
    2 stalks celery, cut up
    1 Tbsp. cornstarch
    1 c. water
    4 Roma tomatoes, cut in wedges
Preparation
    Cut beef in thin strips 1/8-inch thick.
    Combine soy sauce, garlic and ginger.
    Add beef.
    Toss and set aside.
    While you prepare vegetables, heat oil in large frying pan; add beef and toss over high heat until brown.
    Cover; simmer 30 to 40 minutes, until tender, over low heat.
    Turn heat up and add vegetables (not tomatoes).
    Toss until tender (10 minutes).
    Mix cornstarch with cold water; add to meat and vegetable mixture.
    Stir and cook until thickened.
    Add tomatoes until they are hot clear through. Serve over white rice.
