Doughnuts (Raised) - cooking recipe

Ingredients
    1 pkg. Fleischmann's yeast
    1 1/4 c. milk, scalded and cooled
    1 Tbsp. sugar
    4 1/2 c. flour
    1/2 c. sugar
    3 Tbsp. butter
    1/4 tsp. mace
    1 egg
    1/4 tsp. salt
Preparation
    Make sponge.
    Dissolve yeast and 1 tablespoon sugar in lukewarm liquid.
    Add 1 1/2 cups of flour and beat well.
    Cover and set aside to rise in warm place for about 1 hour or until bubbles burst on top.
    Add to this the butter and sugar (creamed), mace, well beaten egg, the remainder of the flour to make a moderately soft dough, and the salt.
    Knead lightly.
    Place in a well-greased bowl. Cover and allow to rise again in warm place for about 1 1/2 hours.
