Rice With Mushrooms And Parmesan Cheese - cooking recipe

Ingredients
    3/4 lb. fresh mushrooms, rinsed and cut into 1/2-inch cubes
    1/2 c. finely chopped onion
    3 Tbsp. butter
    salt to taste (if desired)
    freshly ground pepper to taste
    1 c. converted rice
    1 bay leaf
    1 1/2 c. fresh or canned chicken broth
    2 Tbsp. freshly grated Parmesan cheese
Preparation
    Prepare mushrooms and onion.
    Heat 2 tablespoons butter in a saucepan.
    Add onion; cook briefly, stirring.
    Add mushrooms. Sprinkle with salt and pepper; stir.
    Add rice; stir to blend. Add bay leaf and chicken broth; bring to simmer.
    Cover; cook for 17 minutes.
    Swirl in remaining tablespoon of butter and the cheese.
    Remove bay leaf.
    Serve.
    Makes 4 servings.
