Cheesy Ham And Potato Casserole - cooking recipe

Ingredients
    2 Tbsp. onion, chopped
    1/4 c. margarine
    1/4 c. all-purpose flour
    1 tsp. salt
    1/2 tsp. dry mustard
    dash pepper
    1 1/2 c. milk
    2 c. cheddar cheese, shredded
    2 c. cooked ham
    6 c. potatoes, cooked and cubed (6 to 8 medium)
Preparation
    Saute onion in butter in a large saucepan until tender.
    Add flour and seasonings, stirring until smooth.
    Cook 1 minute, stirring constantly.
    Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
    Add 1 1/2 cups of the cheese, stirring until cheese melts.
    Add ham and potatoes, tossing gently.
    Spoon into a greased 2 quart shallow baking dish. Bake uncovered at 350\u00b0 for 25 minutes.
    Sprinkle with remaining 1/2 cup cheese and bake an additional 5 minutes.
    Makes 6 servings.
