Ingredients

1/2 bushel beets (with about two-inches of top left on)
5 lb. sugar
1 box pickling spice
1/2 gal. vinegar (dark)
1/8 tsp. alum
1 small clove garlic
1/8 tsp. ground red pepper or 1 small pod (optional)
1 head fresh dill
Preparation

Cook very young, small green beans (whole) for 10 minutes. Chill in ice water.
Pack in pint jars.
