Protein Fruit Cake - cooking recipe
Ingredients

2 c. cooked pinto beans, well drained, mashed and unsalted
1 stick margarine, melted
1 c. sugar
1 tsp. cinnamon
1 tsp. allspice
2 eggs
1 c. sifted flour
1/2 c. chopped nuts
1 tsp. soda
1 tsp. salt
1 c. seedless raisins
2 tsp. vanilla
2 c. finely chopped apples, peeled
Preparation

The beans should be soaked overnight and then cooked in water to cover in the usual manner, adding no salt or meat.
Cook until tender enough to mash with a fork.
Cream melted margarine and sugar.
Add vanilla and eggs and beat in mashed beans.
Sift dry ingredients together, then stir into bean mixture.
Stir in raisins, apples and nuts.
