Egg Batter Fried Fish(Pesce Di Fritta) - cooking recipe

Ingredients
    2 lb. flounder fillets
    olive oil for frying
    1 c. flour
    3 eggs, beaten well
    salt and pepper
    lemon wedges
Preparation
    Wash fish and drain
    in
    colander.
    Put
    oil
    in medium non-stick skillet to heat.
    Place
    fish
    in
    flour
    until well coated and then into eggs mixed with salt and pepper.
    Immediately place in hot oil
    and
    cook
    on
    medium-high
    heat until lightly golden on each side.
    Turn
    carefully
    as not to break fillets. Serve on warm plate with lemon wedges.
    Makes 4 to 6 servings.
