Zucchini Cheese Casserole - cooking recipe

Ingredients
    1/2 c. long grain rice
    1/2 c. chopped onion
    3/4 tsp. salt
    1 1/2 c. boiling water
    1 lb. sliced zucchini
    1 (8 oz.) can tomato sauce
    1 c. shredded Cheddar cheese
Preparation
    Add rice, onion and 1/2 teaspoon salt to 1 cup rapidly boiling water.
    Cover tightly; boil gently for 20 minutes.
    Bring 1/2 cup water to boil.
    Cook squash until tender, about 8 minutes (or steam).
    Drain.
    Gently mix rice, squash, tomato sauce and green pepper.
    Pour mixture into 1 1/2-quart casserole.
    Sprinkle with shredded cheese.
    Bake uncovered about 20 minutes.
    Makes 6 servings.
