Shrimp Creole - cooking recipe

Ingredients
    1/4 lb. butter
    1 medium onion, chopped
    1 green pepper, chopped
    3 stalks celery, chopped
    1 (14 oz.) can tomato puree
    3 bay leaves
    1/4 tsp. thyme
    1 Tbsp. sugar
    1/2 c. white cooking wine
    1/2 lb. fresh, large shrimp, in shells, or 1 lb. small shrimp in shells
    salt and pepper to taste
Preparation
    Melt butter in a saucepan.
    Add onion, green pepper and celery and saute until vegetables are soft.
    Add tomatoes, puree, spices, sugar, wine and shrimp.
    (Shrimp cooked in shells have extra flavor from a thin layer of fat between shells and the meat.) Cook over medium heat for 20 minutes.
    Makes about 8 cups.
    Can be served over rice.
