Beans & Rice Enchiladas - cooking recipe

Ingredients
    1 box Uncle Ben's Rice
    1/2 c. diced onions
    1/2 c. salsa
    1/2 c. diced green pepper
    1 tsp. vegetable oil
    8 warm corn tortillas
    1/2 c. shredded cheese
Preparation
    Cook beans and rice according to package omitting margarine. Preheat oven to 350\u00b0.
    In a skillet, brown onions and peppers in oil.
    Add to beans and rice.
    In each tortilla spoon 1/3 cup of beans and rice.
    Roll up and place on oven proof casserole dish. Pour salsa over enchiladas.
    Sprinkle with cheese and bake in 350\u00b0 oven for 10 minutes.
    Makes 4 servings.
