Home-Canned Tomato Juice (V-8 Style) - cooking recipe

Ingredients
    25 lb. tomatoes
    6 to 8 tsp. paprika
    6 to 8 tsp. celery seed
    1/2 tsp. cayenne
    10 tsp. salt
    10 Tbsp. sugar
Preparation
    Blanch, peel, core and quarter tomatoes. Puree in food processor. Bring tomatoes to simmer. Add spices and sugar. Simmer until tomatoes turn color and quit smelling like tomatoes. Put through water bath for 40 minutes. Yields approximately 10 quarts.
