Southern Skillet Chicken Creole - cooking recipe
Ingredients

1/3 c. vegetable shortening
1 (2 1/2 lb.) frying chicken
1 large chopped onion
1 large chopped green pepper
1 c. sliced mushrooms
1 garlic clove, mashed
1 (28 oz.) can whole tomatoes
1 c. uncooked rice
1 c. water
2 tsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
Preparation

Melt shortening in large skillet; brown chicken and remove from skillet.
In remaining shortening, saute onion, green pepper, mushrooms and garlic.
Stir in remaining ingredients.
Place chicken on top of mixture.
Cover and simmer about 30 minutes or until chicken is tender and rice is cooked.
Makes 4 to 6 servings.
