Zucchini Medley - cooking recipe
Ingredients

2 lb. sliced zucchini (unpeeled)
1 onion, chopped
1/2 green pepper, chopped
1 c. canned tomatoes
1 tsp. parsley
2 leaves basil
1/4 tsp. oregano
dash of garlic powder
salt and pepper to taste
Preparation

Saute in covered skillet for 15 minutes.
Mix 2 eggs and 1 tablespoon of grated cheese; spread over mixture.
Cook, covered, until eggs are firm.
Put skillet under broiler until brown.
